A fair question before you start is whether trying passwords can damage the archive. Here it cannot. The archive is opened read-only, every check happens in memory, and the result is written as a separate file. If the password is not found, you still have exactly the archive you started with.

A .ZIP file can be locked in two different ways. One is legacy ZipCrypto from PKWARE. The other is WinZip AES (AE-1 and AE-2, AES-128 and AES-256), which current archivers write. The program reads the archive headers, reports which one it found, and switches to the matching mode itself.

Dictionary first, then patterns

The search opens with a word list, because most forgotten passwords were words that a person once picked on purpose. Say you remember the shape of it, an eleven letter word plus three characters you cannot place. Describe that shape as a mask and only passwords of that shape are tried.

The search runs on the GPU when the PC has one. That matters most for WinZip AES. The format derives its key with PBKDF2-HMAC-SHA1 at 1000 iterations, roughly a hundred times lighter than Office 2013 and newer. That is why a word list, or a mask when you recall part of the password, still has a real chance here. Without a GPU the program still works on the CPU, and it warns up front that the search can take a very long time.

Yes, when the password can be recovered. The content of a .ZIP is encrypted, so there is no setting that removes the password. The ZIP password recovery software has to find the password first, confirm it on the file, and only then write out a copy that opens without asking. That is what it takes to unlock a password protected ZIP you own.

Passwords built from words, names or dates come back quickly, and archives protected with legacy ZipCrypto move fast even on a plain CPU, because that format has no key derivation to slow a search down. A password that was long and fully random, on WinZip AES, is the case where we promise nothing.
